Made from the not very common cultivar “Oiwase”, which is a cross between Yabukita and Yaeho. This Sencha from the Shizuoka Prefecture has a fragrant and invigorating taste. The perfect balance between creamy, fruity and fresh. Harvested from the tea gardens in Kakegawa, this is the first year the Oiwase cultivar is available at the Tea Centre of Stockholm.

We are a bit selective when it comes to Japanese tea cultivars and, while we enjoy the bright and verdant Yabukita and Saemidori cultivars, this Oiwase Sencha manages to add a little bit more depth to its character.

This Oiwase Sencha has been lightly steamed (approximately 30 seconds) and rolled carefully to maintain fuller tea leaves. This lighter steaming is perfectly suited for teas growing on steeper slopes as these leaves have naturally lower levels of astringency and bitterness compared with plateau tea.

Serving tips

For this tea we suggest trying the Gong Fu-style of brewing. The idea behind it is to use a high tea leaf to water ratio and very short infusions. By using more tea leaves and very short infusions, we extract only parts of the full flavor spectrum. This means that this way of brewing lets you taste the tea in “sections”, which makes for a much more nuanced experience. because the flavor unfolds gradually and since a lot of leaf is used, those flavors are also significantly more intense than in western-style brewing.
