Karigane or Karigane-cha refers to tea made from stalks especially, from stalks of Gyokuro or high-grade Sencha. The name derives from the fact that the stem of tea looks like a wild goose (雁 Kari) sitting on tree branches above the water.

This term is mainly used to differentiate it from its Japanese equivalent Kukicha, which is stalk tea too but often made from simpler Sencha and other varieties of Japanese green teas.

So why drink tea made from stalks instead of regular rich leaf? The fact is that the stalk left behind in production of green tea is also rich in healthy nutrients, have allot of umami flavour, appetizing aroma, and sweetness. The stalks and stems are exposed to less sunlight compared to the leaves which result in less production of catechins and have more sweet notes in the end product.

Serving tips

For this tea we suggest trying the Gong Fu-style of brewing. The idea behind it is to use a high tea leaf to water ratio and very short infusions. By using more tea leaves and very short infusions, we extract only parts of the full flavor spectrum. This means that this way of brewing lets you taste the tea in “sections”, which makes for a much more nuanced experience. because the flavor unfolds gradually and since a lot of leaf is used, those flavors are also significantly more intense than in western-style brewing.
