From the first contact with these sublime mountain tea leaves, we are surprised by the strength of the fragrance that they release. It is a very complex scent, but also very natural, with no excess sweetness. The steaming is minimal and the rolling is perfectly mastered.

Shincha meaning “new harvest tea”, offers Japanese green tea enthusiasts the freshest tasting and smelling Sencha of the year. Our 2021 Asanoka shincha is grown in Kakegawa, Shizuoka Prefecture. It is lightly steamed (Asamusicha) and has a beautiful fragrant green colour leaf when brewed. Oat porridge aroma with a sweet Amalfi lemon finish, a rich and balanced First Flush Sencha.

This tea is made from the Yabukita cultivar tea plant, which is one of the most famous cultivars. The fragrance of the liquor contrasts with that of the leaves, and it is very fresh, with no heaviness. In contrast, the liquor shows strength and depth.

Serving tips

For this tea we suggest trying the Gong Fu-style of brewing. The idea behind it is to use a high tea leaf to water ratio and very short infusions. By using more tea leaves and very short infusions, we extract only parts of the full flavor spectrum. This means that this way of brewing lets you taste the tea in “sections”, which makes for a much more nuanced experience. because the flavor unfolds gradually and since a lot of leaf is used, those flavors are also significantly more intense than in western-style brewing.
