Among the peaceful green hills, magnificent fauna and famous limestone reefs of the small island of Gotland is a humble producer of high quality honey. Irja Morell Persson began her passion for bees and honey when her family moved to Gotland in 2017, an island celebrated for its quality in agriculture. Her desire to grow and produce the sweet ambrosia has resulted in a small and exclusive production of honey.
The honey is produced in Kappelshamn in northern Gotland and harvesteds during late summer when the bees have taken their nectar from summer flowersna and lucerne which are grown for animal feed.
Each bee visits over two million flowers to provide this jar with 240g of honey. Bees have a flight radius of 3 km and the hives are placed scattered among organic fields and forests. Bees collect nectar from different plants at veach harvest of honey, creating a unique character each time and regardlessthat bythe cups are in exactly the same place as the year before.
Honey contains a number of different healthy antioxidants and is also anti-inflammatory. To preserve as muchas possible of these nutritious substances, you should add your honey to the tea when the tea has cooled to drinkable temperature .
Irja herself loves to enjoy her honey on freshly baked bread with a little butter and fresh meat, but is also fond of adding a click to his favorite tea.
